Chicken omelette

It has been a while but yesterday I made myself a chicken omelette: I slice the chicken into rather small strips, brown them in the skillet, then add the egg. For some reason, I think the taste comes out to be very agreeable. With living alone, many things I make are good for multiple portions; I put some browned chicken aside and will probably use it in another omelette on Wednesday, probably topping it with Cheddar.

I have never had chicken with eggs. It's never even occurred to me.

Now you mention, I can't think of anywhere else I've seen it, nor do I remember why I tried it!

Aha, I wonder if I got the idea from East Asian cuisine! I sure used to order chicken egg fu yung and such.
