Responsible cheese-eating

When farmed animals are listed in order of deleterious environmental impact cows tend to be right at the top of the list. I try to eat rather more fish and poultry instead though a couple of nights ago I did treat us all to sirloin. Unfortunately for me, it occurred to me that cheese tends to rather involve cows (or other ruminants). I am rather partial to cheese, especially cow-derived ones like mature English cheddar. Perhaps I am morally obligated to reduce my cheese consumption even though I am doubtful about finding an adequate substitute. It's not like, say, good pig cheese is also on offer.
