A simple default lunch
Today I fall back to one of my simple default kinds of lunch: sliced Roma tomatoes atop toast, topped with Muenster cheese then grilled, then overeasy fried eggs on top, with milk chocolate and an apple for dessert. Tomorrow I'll fry some frozen pierogi in butter, maybe also some diced onion, and have them with a can of vegetable soup.

For me, I whip up a batch of gazpacho in my food processor once or twice a week and grab a small cylinder of Ritz crackers to act as spoons. I vary as to which peppers I use as to what's available, usually poblanos or Anaheims with a Jalapeno thrown in to spice it up a notch. If I can get a Hatch, I'll use it, but since we're the state that grows them, they sell out quick after the harvest.
It's a lot less expensive than going out for junk food and a lot healthier!
